A rare and gastronomic expression of Côtes de Provence La Londe

Rosé from Provence is often associated with lightness, freshness, and immediate pleasure.

But every so often, a wine comes along that expands the idea of what rosé can be — more structured, more complex, and clearly built for the table.

The “Audace” 2023 from Château Pas du Cerf is exactly that kind of wine. Coming from the prestigious Côtes de Provence La Londe, it belongs to a small group of rosés that go beyond simple refreshment and move into the territory of gastronomic wines.

A rosé with oak ageing, depth, and a clear sense of ambition.

Château Pas du Cerf – between forest, sea, and vineyards

The estate Château Pas du Cerf is located in a remarkable natural setting between the Mediterranean coastline and the cork oak forests of Provence.

This proximity between sea breezes and forest landscapes plays a key role in the identity of the wines: freshness from the maritime influence, and depth from the surrounding terroir.

With “Audace”, this sense of place is pushed further — resulting in a rosé that reflects both power and refinement.

Mourvèdre and Grenache – structure and elegance

The blend is simple but expressive:

  • 50% Mourvèdre
  • 50% Grenache

Grenache brings roundness, fruit, and generosity.
Mourvèdre adds structure, depth, and aromatic complexity.

Together, they create a rosé with real backbone — far from the light, immediate style often associated with the category.

A more ambitious winemaking approach

What makes “Audace” stand out is its winemaking philosophy.

The process begins with night harvesting to preserve freshness, followed by cold skin contact to extract delicate aromas and structure. Only the finest free-run juice is selected, and fermentation is carried out at low temperature.

After this precise work in stainless steel, the wine is aged for two months in oak barrels.

This final step is crucial: it does not dominate the wine, but adds subtle layers of texture, softness, and complexity.

In the glass – a rosé with depth and elegance

The colour is pale pink, with soft salmon and golden reflections — already suggesting something more structured than a typical rosé.

On the nose, the wine is expressive and layered. Exotic fruit notes such as passion fruit, mango, and melon are lifted by subtle hints of vanilla and orange blossom. There is both intensity and finesse.

On the palate, the wine shows roundness and generosity, balanced by a fresh and elegant acidity. The texture is smooth, almost silky, carrying flavours of exotic fruit and delicate oak influence.

The overall impression is one of harmony: richness, freshness, and precision in equal measure.

A rosé designed for gastronomy

“Audace” is clearly a food-driven rosé.

It pairs naturally with refined Mediterranean cuisine: seafood dishes such as sea urchin, bouillabaisse, or roasted octopus with herbs. It also works beautifully with more surprising combinations, such as veal with tropical spices or even delicate fish served with richer accompaniments.

This is a rosé that is not just for aperitif moments — it belongs on the dining table.

A different vision of Provence rosé

What makes “Audace” special is its intention.

It shows that Provence rosé is not a single style, but a spectrum. At one end, light and immediate wines for easy enjoyment. At the other, structured and complex wines designed for gastronomy and ageing potential.

Château Pas du Cerf chooses here to explore the second path.

A rosé that lives up to its name

“Audace” is more than a cuvée name — it is a statement.

A rosé that embraces oak, structure, and complexity while staying true to its Provençal identity. A wine shaped by careful winemaking and a strong sense of place.

Bold, elegant, and refined, it is a reminder that rosé can be as serious and expressive as any other great wine style.
