The Maury appellation sits in the Agly valley, on black schist soils that absorb heat during the day and release it at night. This creates ideal conditions for producing rich, concentrated wines.

Maury is traditionally known for its natural sweet red wines (vin doux naturel), made using a technique that stops fermentation early to preserve the grape’s natural sugars.

These wines are not about residual sweetness alone — they are about balance, structure, and the integration of fruit, alcohol, and time.


Grenache – the soul of Maury

At the heart of Maury is Grenache.

This grape thrives in hot, dry conditions and is perfectly suited to the Roussillon. It produces wines with ripe red and black fruit, notes of dried herbs, and a naturally generous texture.

In sweet wines like Maury, Grenache takes on an even more expressive role. The concentration of sugar enhances its fruit profile, while the structure of the grape ensures the wine never feels heavy or cloying.


The art of mutage – stopping fermentation in time

The key technique behind Maury is called mutage.

During fermentation, when the grape juice begins to transform into alcohol, a neutral grape spirit is added. This stops the process by killing the yeast, preserving a portion of the natural sugar from the grapes.

The result is a wine that retains both sweetness and freshness, with the alcohol acting as a structural element rather than an overpowering one.

After this, the wine is often aged in barrel or tank, allowing it to develop complexity over time — notes of fig, cocoa, dried fruit, and spice slowly emerging.

The nose is intense and expressive, with aromas of black cherry, plum, fig, and cocoa. On the palate, the wine is smooth and enveloping, with a natural sweetness balanced by freshness and gentle tannins from the Grenache.

Despite its richness, it never feels heavy. Instead, it moves with a sense of harmony — sweet, but structured; powerful, but controlled.


A wine of contrast and balance

Maury is often misunderstood as simply “sweet red wine”. In reality, it is far more complex. It is about contrast: sugar and acidity, fruit and spice, richness and freshness.

It can be enjoyed on its own, slowly, or paired with chocolate desserts, blue cheese, or even savoury dishes that play against its sweetness.

The Maury 2023 from Mas de Lavail is a perfect introduction to this unique corner of France. It reflects the landscape, the grape, and the tradition behind it — but also a more modern approach to balance and drinkability.
