A biodynamic Languedoc wine where the vessel protects the expression of the vineyard
In wine, the choice of ageing vessel is never just a technical decision. It is a choice of philosophy.
Oak barrels, stainless steel, amphorae, concrete… each material shapes the way a wine evolves and expresses itself.
The “La Pierre Plantée” 2024 from Domaine Les Éminades, in the Saint-Chinian appellation, is a beautiful example of a wine where the goal is not to add a flavour, but to preserve the identity of the grapes and the terroir.
Instead of oak, this cuvée is aged in concrete vats — a traditional but increasingly appreciated choice among many modern winemakers.
Saint-Chinian – the diversity of the Languedoc
Located in the northern part of the Languedoc, between mountains and Mediterranean influences, Saint-Chinian is an appellation with remarkable diversity.
The region combines sunshine, altitude, wind, and a variety of soils, creating wines that can range from powerful and structured to fresh and elegant.
Here, the vineyards are shaped by the Mediterranean climate: warm days, dry summers, and the influence of winds that help maintain healthy grapes.
The soils of La Pierre Plantée are made of galets roulés (rounded stones), which retain heat during the day and release it slowly at night, helping the grapes reach maturity while preserving balance.
Domaine Les Éminades – organic and biodynamic philosophy
Created in 2002, Domaine Les Éminades has built its identity around careful vineyard work and respect for nature.
The estate is certified organic and biodynamic, with a philosophy centred on living soils and healthy vines.
No herbicides are used. The vines are worked mechanically, with traditional pruning methods such as gobelet and cordon de Royat. Harvesting is done by hand, in small crates, with careful sorting to select only the best grapes.
This attention in the vineyard is essential: great wines begin long before the cellar.
La Pierre Plantée 2024 – a classic Languedoc blend
The cuvée is made from a traditional southern French blend:
- 50% Grenache
- 25% Cinsault
- 25% Syrah
Each grape brings its own personality.
Grenache provides generosity, ripe fruit, and roundness.
Cinsault adds freshness, elegance, and a lighter aromatic touch.
Syrah contributes spice, colour, and structure.
Together, they create a wine that reflects the warmth of the Languedoc while maintaining a beautiful sense of balance.
Why concrete? Understanding the concrete vat
For many people, wine ageing is automatically associated with oak barrels. But concrete has a very different purpose.
Unlike oak, concrete is a neutral material: it does not add flavours of vanilla, toast, or spice to the wine.
Instead, it allows the wine to evolve naturally while preserving the purity of the fruit.
Concrete also has a natural thermal stability, helping maintain a steady temperature during ageing. Its slight porosity allows a very gentle exchange with oxygen, softer than a barrel but more alive than a completely closed stainless-steel tank.
The result is often a wine with:

- smooth texture
- freshness
- a clear sense of place
It is a vessel chosen by winemakers who want the vineyard, rather than the ageing container, to take centre stage.
Vinification with minimal intervention
La Pierre Plantée is produced through traditional methods.
The grapes are harvested manually and partially destemmed. Fermentation takes place with indigenous yeasts, allowing the natural microflora of the vineyard to participate in the wine’s identity.
The wine is then aged for 10 months on lees in concrete vats, gaining texture and complexity while keeping the freshness of the fruit.
In the glass – a true expression of Saint-Chinian
The 2024 vintage shows the generous personality of the Languedoc without heaviness.
Expect aromas of ripe red fruits, Mediterranean herbs, and subtle spices. On the palate, the wine is smooth and balanced, with a lovely combination of fruit, freshness, and soft tannins.
The absence of oak influence allows the natural character of Grenache, Cinsault, and Syrah to remain at the centre.
