A natural sparkling wine from the Loire, made the ancestral way

Muscadet is a region we usually associate with crisp, mineral whites, oysters and the Atlantic.

But every now and then, a bottle comes along that reminds us that a wine region doesn’t have to stay inside the lines.

Effervescence Programmée from Domaine de l’Épinay is one of those bottles.

A Pét-Nat from the Muscadet region, made organically and without unnecessary complications, it is fresh, lively and wonderfully easy to share.

And yes, it has bubbles.


Pét-Nat: the original way to make sparkling wine

Before Champagne developed its elaborate production method, there was another, much simpler approach.

The méthode ancestrale.

Instead of fermenting the wine completely, adding a second fermentation and then carefully managing the bubbles, the wine begins its fermentation and is bottled while fermentation is still underway.

The remaining fermentation happens in the bottle.

The result?

Natural bubbles.

There is no added sugar, no second fermentation and no attempt to manufacture a particular style.

The wine simply finishes what it started.


One fermentation, straight into the bottle

For Effervescence Programmée, the philosophy is wonderfully straightforward.

One fermentation.
In the bottle.
No added sugar.

It sounds simple — and that’s precisely the point.

The resulting bubbles are fine and lively, carrying the fresh character of the wine rather than dominating it.

And unlike some sparkling wines that demand a certain ceremony, this one seems much more interested in having a good time.


Fresh, floral and made to refresh

The nose is immediately inviting, with aromas of fresh white fruit, delicate floral notes and a touch of citrus.

On the palate, the wine is lively without being aggressive.

Fruity without becoming heavy.

The bubbles bring energy, while the freshness makes the whole wine remarkably thirst-quenching.

It is the sort of bottle where the first glass disappears rather quickly.

Then someone asks:

“Should we open another one?”


From a family estate in Clisson

Domaine de l’Épinay has been part of the landscape of the Nantes vineyards since 1980, when it was founded by the Paquereau family.

The estate itself has a much older history. The property dates back to the 16th century, when it was an estate with Spanish origins.

Today, brothers Cyrille and Sylvain Paquereau run the domaine, continuing the family story while taking it in a more environmentally conscious direction.

The estate has been certified organic since 2011, and today all of its wines are produced under organic certification.

So even this slightly rebellious bottle comes from a very deliberate approach to the vineyard.


Muscadet, but with a little mischief

There is something particularly enjoyable about making a Pét-Nat here.

The Muscadet region has such a strong identity that we often forget how much room there is for experimentation.

Effervescence Programmée takes the freshness that we love from the Loire and gives it a completely different format.

It is not trying to compete with Champagne.

It isn’t trying to be serious.

And it certainly isn’t trying to impress you with complicated terminology.

It simply wants to be fresh, lively and fun.


The bottle for a table full of friends

Serve it properly chilled, around 6–8°C, and don’t overthink the food.

Go for goat’s cheese, raw fish, light vegetarian dishes or little snacks to share.

Or, honestly, don’t bother with food at all.

This is exactly the kind of bottle we like to see opened when friends arrive, glasses start appearing on the table and nobody has planned exactly how the evening is going to go.
