Why Chablis remains the world’s benchmark for pure Chardonnay

Few wine names are as instantly recognisable as Chablis.

Even those who know little about wine have heard of it. Yet Chablis is often misunderstood. Many expect a rich, buttery Chardonnay, only to discover something far more vibrant, mineral and refreshing.

That is exactly why Chablis has become a classic.

The 2024 Chablis from Domaine Millet is a wonderful expression of everything that has made this appellation famous: purity, freshness and an unmistakable sense of place.

An ancient seabed beneath every vine

The secret of Chablis lies underground.

Around 150 million years ago, this part of Burgundy was covered by a warm tropical sea. As the waters gradually disappeared, they left behind layers of limestone packed with tiny fossilised marine organisms.

This unique soil, known as Kimmeridgian limestone, is one of the world’s most celebrated vineyard terroirs.

Wine lovers often describe Chablis as mineral, but that character isn’t added in the cellar—it begins in these remarkable soils, which have shaped the wines for millions of years.

Chardonnay without disguise

Like every Chablis, Domaine Millet’s wine is made from 100% Chardonnay.

Unlike many Chardonnays from warmer climates, however, the emphasis here is never on oak or richness.

The grapes are vinified traditionally and aged on their fine lees in temperature-controlled stainless steel tanks, preserving the grape’s natural freshness and allowing the vineyard itself to remain the star.

The result is a style that is elegant, precise and unmistakably Chablis.

A family committed to quality

Domaine Millet has built an excellent reputation through decades of consistent winemaking.

As proud Independent Winegrowers, the family oversees every stage of production—from the vineyard to the bottle—remaining faithful to the traditions of Chablis while continually refining their work.

Their commitment has been recognised through numerous awards and wine guides, and the estate is also certified High Environmental Value (HVE), reflecting its dedication to sustainable vineyard practices and the protection of its natural environment.

In the glass – freshness with quiet elegance

The 2024 vintage shines with a pale golden colour and delicate green reflections.

The nose is refined and expressive, combining white flowers, subtle orchard fruit and the hallmark mineral character that defines Chablis.

On the palate, the wine is silky yet lively, balancing generous fruit with refreshing acidity. The finish is long, clean and beautifully chiselled, leaving a lasting impression of freshness rather than weight.

It is a style that feels effortless, yet can only be achieved through exceptional terroir and careful winemaking.

One of the world’s great food wines

Few white wines are as versatile at the table as Chablis.

Its freshness makes it a natural companion for oysters, shellfish and grilled fish, while its elegance also pairs beautifully with roast chicken, creamy poultry dishes, goat’s cheese or simply as an apéritif.

Served at 11–12°C, it offers immediate pleasure today, while also rewarding three to four years of careful cellaring.

A classic that never goes out of style

In a world where wine fashions constantly evolve, Chablis remains remarkably timeless.

It does not seek to impress through power or oak, but through balance, purity and authenticity.

The Domaine Millet Chablis 2024 is a perfect reminder that some of the greatest wines are also the simplest in their philosophy: one grape, one extraordinary terroir, and generations of experience allowing nature to speak for itself.
