Description
“Instinct” 2023 is an elegant and characterful white wine from Château Pas du Cerf, produced in the prestigious Côtes de Provence La Londe appellation. Located close to the Mediterranean coast, La Londe is renowned for producing some of Provence’s most refined and mineral-driven wines, thanks to its unique combination of sunshine, sea influence and schist-rich soils.
This cuvée is made from 100% Rolle, the emblematic white grape variety of Provence, celebrated for its freshness, texture and aromatic complexity. The grapes are harvested at night at low temperatures to preserve their purity and freshness. After a 12-hour cold skin maceration, the wine undergoes gentle direct pressing, with only the finest free-run juices selected. Fermentation takes place slowly at low temperature over approximately 20 days, followed by ageing in stainless steel tanks and two months in oak barrels, adding depth and subtle complexity without overpowering the fruit.
The wine displays a brilliant pale yellow colour with crystalline reflections and wheat-straw highlights. The nose is both expressive and refined, opening on aromas of ripe pear and white flowers such as hawthorn, before evolving towards more complex spicy notes of curry, nutmeg and the distinctive herbal character of the Provençal garrigue.
On the palate, “Instinct” is full-bodied yet remarkably fresh, combining richness with precision and vivacity. Flavours of orchard fruits and gentle spices unfold with elegance, leading to a long and delicate finish. The balance between texture, freshness and aromatic complexity makes this a true gastronomic white wine.
This cuvée pairs beautifully with refined dishes such as stuffed capon, salt-crusted sea bass, veal with chanterelle mushrooms, pork fillet with apricot or mature cheeses like Saint-Nectaire. Best served between 8 and 10°C and ideally decanted two hours before serving, it also offers excellent ageing potential of 3 to 5 years.
