Description
Le Haut Midi is Thomas Pichet’s star cuvee from Chinon. Haut Midi, French for “high noon”, refers to the sun exposure of the parcel. Made from Cabernet Franc planted on an exceptional south-facing plot, cultivated with real respect for the land (the domaine has been certified organic since 2013). That south-facing orientation means the grapes soak up maximum sunshine, building the kind of ripeness and concentration that sets this wine apart from lighter, more fruit-forward Chinons.
The grapes are harvested at peak ripeness before spending 12 months maturing in oak barrels. The result? A wine that’s rich and structured without being heavy. Think ripe black fruits, a whisper of spice, tannins that feel smooth and generous rather than grippy and a subtle oak influence.
