Description
“Cebenna” 2024 is a lively and terroir-driven red wine from Domaine Les Eminades, produced in the Saint-Chinian appellation. Founded in 2002 by Patricia and Luc Bettoni, the estate is known for its organic and biodynamic philosophy, crafting wines that capture both the generosity and freshness of the Languedoc.
The vineyards are planted on distinctive red sandstone (“grès rouges”) soils at an average altitude of 230 metres, contributing to the wine’s warmth, aromatic intensity and supple texture. The blend is composed of 70% Grenache—half of which is vinified in whole bunches—alongside 25% Syrah and 5% Mourvèdre. This combination brings together fruit purity, spice and structure. The vines are farmed without herbicides, with careful soil work and traditional pruning methods (gobelet and cordon de Royat). Harvesting is done manually in small crates, with strict sorting, and yields are kept low at around 26 hl/ha.
Vinification follows a traditional approach using indigenous yeasts, with partial destemming and gentle extraction through pump-overs. The wine is then aged for 10 months on its lees in concrete tanks, preserving freshness and enhancing texture while maintaining the integrity of the fruit. Production is limited to around 8,000 bottles.
The 2024 vintage opens with inviting aromas of ripe raspberry, cherry and red plum, layered with notes of white pepper, dried herbs and a hint of liquorice. On the palate, it is supple and juicy, with fine tannins, bright acidity and a smooth, balanced structure. The finish is fresh, lightly spicy and highly drinkable.
“Cebenna” is a versatile and food-friendly wine, ideal with grilled meats, Mediterranean dishes, roasted vegetables or charcuterie. Best served around 17°C, it can be enjoyed in its youth for its vibrant fruit, or cellared for 5 to 8 years to develop additional complexity.
