For many people, Sancerre is the ultimate fresh aperitif wine.

Bright.

While that style certainly exists, the greatest producers know that Sauvignon Blanc is capable of much more.

A family that lets nature lead

The Fouassier family has been cultivating vines in Sancerre for ten generations.

Today, Benoît and Paul Fouassier continue a philosophy built on one simple belief: the healthier the vineyard, the more expressive the wine.

Long before sustainability became fashionable, insecticides disappeared from the estate. Herbicides followed shortly afterwards. Natural grass now grows between the rows, biodiversity has been encouraged through the planting of trees and hedgerows, and the vineyards are cultivated according to both organic and biodynamic principles.

Certified by Biodyvin since 2011 and Demeter since 2022, every decision is made with the long-term health of the vineyard in mind.

The goal is not to make wines that taste the same every year.

The goal is to allow each vintage to speak honestly.


Patience creates complexity

Mélodie is made from 45-year-old Sauvignon Blanc vines growing on a fascinating mosaic of flint-rich clay and ancient Kimmeridgian limestone.

In the cellar, nothing is rushed.

The fermentation takes place naturally using indigenous yeasts in large 500-litre French oak barrels.

The wine then rests on its lees for around ten months before being blended, followed by another full year ageing on its lees before bottling.

Even the cellar work follows the rhythm of the lunar calendar.

There is no fining, no unnecessary intervention and no attempt to polish away the wine’s personality.

Only time.


A Sauvignon Blanc like no other

Forget the explosive gooseberry aromas often associated with New World Sauvignon Blanc.

Mélodie takes a completely different path.

The nose opens with candied orange, delicate vanilla and warm spices, revealing remarkable depth and elegance.

On the palate, the wine is broad, almost spherical in texture, yet beautifully lifted by a vibrant natural acidity that keeps everything perfectly balanced.
