WINEMAKING : Manual harvest. Traditional with native yeasts and separated for each grape variety, long macerations, control of fermentation temperatures. Light punching down and reassembly.
AGING : 500L French oak barrel for 18 months
FOOD PAIRING : Entrecôte, 7-hour leg of lamb, rack of lamb, tagine with prunes, chocolate in all its forms
