Description
Domaine Baud is a historic family estate based in the Jura, in the village of Le Vernois, with winemaking roots dating back several generations. Today, the domaine is run with a strong focus on tradition and authenticity, working across classic Jura appellations such as Côtes du Jura, Arbois and Château-Chalon. The estate is particularly respected for its traditional sweet and oxidative styles, including Vin Jaune and Vin de Paille, both deeply rooted in the region’s heritage.
The Vin de Paille 2022 is made using a centuries-old method in which carefully selected grapes—typically Chardonnay, Savagnin and Poulsard—are harvested at optimal ripeness and then dried for several weeks to several months on straw mats or in well-ventilated crates. This natural dehydration concentrates sugars, acidity and aromatic compounds, resulting in an exceptionally rich must with intense flavour density.
After slow pressing, fermentation takes place over an extended period due to the high sugar concentration, often stopping naturally before full dryness is reached. The wine is then aged in small oak barrels for several years, allowing it to develop complexity, texture and oxidative nuance while maintaining balance. The 2022 vintage reflects both the precision of the estate and the warmth of the year, delivering richness without heaviness.
In the glass, the wine shows a deep amber-gold colour and an aromatic profile of dried apricot, fig, quince paste and orange peel, layered with honey, caramel, toasted almond and subtle spice. The palate is opulent yet lifted, with a rich, syrupy texture balanced by vibrant acidity that prevents the wine from feeling heavy. The finish is long, complex and evolving, with lingering notes of nuts, dried fruit and citrus zest.
A classic expression of Jura winemaking tradition, Domaine Baud’s Vin de Paille 2022 is both a contemplative wine and a natural partner for foie gras, blue cheese or desserts based on fruit and nuts. It also shines on its own as a meditation wine, with remarkable ageing potential that allows it to evolve for decades.
