Description

“Sortilège” 2022 is a flagship red cuvée from Domaine Les Eminades, produced in the Saint-Chinian appellation. Founded in 2002 by Patricia and Luc Bettoni, the estate is widely recognised for its organic and biodynamic approach, crafting wines of precision that express both the strength and subtlety of the Languedoc terroirs.

This wine comes from high-altitude vineyards (around 300 metres) planted on clay-limestone soils, bringing freshness and structure to the blend. “Sortilège” is composed of 55% Mourvèdre, 40% Syrah and 5% Grenache, with high-density plantings that enhance concentration and complexity. The vineyard is worked without herbicides, using traditional pruning methods (gobelet and cordon de Royat), and the grapes are hand-harvested in small crates with rigorous sorting. Yields are kept very low at around 25 hl/ha, ensuring depth and intensity.

Vinification is carried out using indigenous yeasts, with around 80% of the grapes destemmed and gentle extraction through pump-overs. The wine is then aged for 20 months in large oak demi-muids (500–600L), allowing for slow maturation and integration without excessive oak influence. Production remains limited, at approximately 12,000 bottles.

The 2022 vintage displays a deep and complex aromatic profile, with notes of blackberry, blackcurrant and plum, layered with black olive, pepper, liquorice and hints of garrigue. On the palate, it is full-bodied and structured, with firm yet polished tannins, balanced acidity and a long, savoury finish marked by spice and mineral tension.

“Sortilège” is a wine built for gastronomy and ageing, pairing beautifully with slow-cooked meats, game, rich stews or aged cheeses. Best served around 17°C, it will continue to evolve over 8 to 10 years, gaining further complexity and refinement with time.
