Baudoin Millet works in a traditional Chablis style, aiming for purity and expression of place rather than oak influence or texture building. The result is a wine that stays tight and precise, opening gradually in the glass without ever losing its line.
This is Chardonnay in its most restrained form. On the nose, expect lemon zest, green apple, and white flowers. The palate is linear and focused rather than generous. A full year of ageing on its fine lees after fermentation gave it a chalky, saline mineral backbone.
Clean, dry, and structured, with enough depth.
Best where Chablis usually belongs: at the table, with anything that benefits from acidity and cut.
